In my constant quest for the happy balance between having the figure of my dreams and also a full stomach I have been greedily trying out several recipes that give me the hope that someday both of my wishes will come true. In reality they probably never will but that doesn’t stop me trying and wanting! I have been busy trying to strengthen my muscles and train for a half marathon and have been trying to improve my nutrition and energy levels. I have tried loads of different recipes, I like some things about one, more things about another and less things about a different one. The Happy Pear, Deliciously Ella and The Body Coach are three of my favourite go to recipe creators recently and if you see the energy levels these have you will see why!
To make 14 energy balls you will need;
- 14 pitted dates, soaked for ten minutes in boiling water
- 1 cup of whole almonds (I leave the skin on)
- 1/2 a cup of unsweetened cocoa powder
- 1/2 a cup of sesame seeds
- 50g of dark chocolate
Line a baking tray with parchment paper.
Whizz up the dates, almonds, cocoa powder and sesame seeds in a processor until a paste is formed.
Take teaspoons of the mixture and with wet hands roll them into balls before placing on the parchment paper.
Melt the chocolate in a bowl over a saucepan of simmering water. When fully melted dip the balls into the melted chocolate and remove using a skewer, allowing the excess to drip back into the bowl.
Place back on the parchment paper and chill.
Absolutely delicious served with a hot coffee or given to friends as a gift!
I made these in my Nutribullet. I started using it around two years ago and it is in daily use in my kitchen ever since. My husband uses it every day for his protein smoothies after his run.
