Pecan Praline!

I have been almost too afraid to bake anything in my kitchen recently for fear of just the sight of oozing melting chocolate or the lingering smell of a sponge cake baking might cause me to ingest unwanted calories!! I have lost 22 pounds in the last couple of months with a mixture of slimming world and running and I am determined this time that they are not going to find me again! However an occasion coming up has put me in the mind for some baking and these gorgeous chunks of praline are going to be used as a decoration atop some unknown as of yet cake.IMG_0150 (1)Praline is incredibly easy to make and with the added fleur de sel granules on top it is irresistible, I may run at least ten miles over the next few days to work off the calories consumed from a few nibbles……

  • 250g caster sugar
  • 180g pecans, broken
  • 85g unsalted butter
  • 1 tbsp vanilla extract
  • 1 tsp fleur de sel
  1. Line a baking tray with some parchment paper.
  2. Place the sugar in a medium-sized saucepan over a medium heat and swirl often until completely liquified.
  3. Add the pecans and butter and stir until caramel is liquid again.
  4. Add in the vanilla extract and stir.
  5. Pour onto the lined baking tray, flatten with a spatula and sprinkle over the fleur de sel.
  6. Allow to cool completely before breaking into pieces.
  7. Brush your teeth after eating!!
