Week five of Slimming World and I am feeling marvellous! I had that wonderful moment this morning when a loved but never worn dress that has been hanging in the wardrobe for months zipped up without me having to jump off the top of the wardrobe into it! When little milestones such as this happen it inspires me to keep going and to continue to eat healthy and move a little more than usual.
I am loving snacking on an abundance of berries these days, red currants and blackberries are amongst my favourites. I had a punnet of each in the fridge and I really wanted to photograph them and make something delicious to blog. I thought of a decadent Belgian chocolate cheesecake with a brightly coloured topping of berries, I dreamt of baked goats cheese wrapped in layers of filo pastry with some red currants gently heated alongside, I pondered about a delicious crumble topped with oat flakes and muscovado sugar served with some creme anglaise but alas none of these delights feature in my new plan!
Instead I settled for a cheeky little four syn cocktail consisting of;
- 35 ml of hendricks gin
- 35 ml of blackberry and red currant berries juiced & sieved
- a squeeze of lime juice
- slimline tonic water
Place gin, juice of berries, lime juice and ice in a cocktail shaker and shake until your hands can’t bear the cold anymore. Pour into a glass and top with tonic water. Drink.
So my cholesterol is in the correct range, I am fitting back into my jeans & my dresses are zipping up……lets not talk about my liver! 😉
