One of the things I am enjoying most about Slimming World is the amount of fresh fruit and vegetables I have been eating. It is costing me a small fortune in berries and cherries to keep the fridge stocked but a punnet disappears almost as soon as I buy them!
I love having fruit with something savoury and the first taste of this reminded me of a visit to a little restaurant in Dunmore East when I was a teenager. It was my first taste of duck with roasted plums and it has stayed with me to this day. I often wonder is that little restaurant still there, it was up a flight of steps if I remember correctly. I recall feeling very grown up ordering the duck!
Ok enough about the duck because today I am blogging about Salmon! I made this for lunch yesterday and it was so incredibly tasty I wanted to share it with you. Thrown together in five minutes it is the perfect lazy summer lunch or would make a great easy starter for a dinner party.
What you need for 1 serving;
- a hot smoked salmon fillet
- 2 juicy oranges which you have segmented (tutorial here)
- 1 paraguayos peach (these are the delicious juicy squashed looking peaches)
- A handful of wild rocket
- A sprinkle of black pepper and salt
So simply assemble and enjoy! I reserved the remainder of the orange flesh and squeezed it over the dish to give it a delicious citrus tang.
